Job summary

The Berkeley in London is seeking a Sous Chef to support the management of all food production for our guests across the hotel and events. You will help supervise preparation of daily dishes and banqueting, check deliveries and liaise with Purchasing to maintain quality.

You’ll motivate the brigade, help ensure outstanding service and adherence to LQA standards, and work with the Exec Chef to deliver memorable guest experiences.

Responsibilities

• Assist the Sous Chef in managing all food production for hotel clients.
• Supervise the preparation of regular items, daily specials, and any other special functions (i.e. Banqueting).
• Check all food deliveries for quality and maintain close liaison with Purchasing Department.
• Encourage and support members of the brigade by motivating them and whenever possible, personally show example and follow up the progress made.
• Complete on a weekly basis, departmental timesheets, ensuring that all absenteeism, sickness, holidays, and overtime are properly recorded and authorised by the Executive Chef.
• Contribute to maintaining an excellent level of service in conjunction with the minimum requirement of the LQA standards at all times.
