Job summary

RBH Hospitality Management is seeking an experienced Head Chef for Hyatt Place London City East in East London. You will lead the kitchen across all outlets, ensure top-quality food and presentation, and drive menus and profitability while maintaining compliance with HACCP and health and safety standards.

You will manage costs, recruit and mentor staff, and collaborate with the F&B and Sales teams to plan events and catering. A hands-on leader with strong communication is essential for success.

Qualifications

• Experience as Head Chef or Senior Sous Chef in hotel/restaurant.
• Strong culinary skills with menu planning and dish development.
• Proven ability to lead and develop a kitchen team and schedules.
• Understanding of food cost, payroll, purchasing, stock control and budgeting.
• Thorough knowledge of food safety, HACCP, allergens and health & safety.

Responsibilities

• Lead kitchen team across restaurant, bar, breakfast, meetings and events.
• Oversee daily operations and ensure high standard of food quality and presentation.
• Develop seasonal menus and collaborate with F&B for commercial viability.
• Control costs, manage procurement, waste and payroll within budgets.
• Recruit, train, and manage staffing levels; monitor performance.
• Ensure compliance with food safety regulations and allergen management.
• Work with hotel management on planning and operational improvements.
