Job summary

The Glee Club Cardiff is seeking an experienced chef with strong leadership to head the kitchen for live comedy and events. The role revolves around a pre-theatre dining style, with service concentrated between 7pm and 8pm and roughly 2 hours per service, while delivering quality dishes for audiences.

You will manage hygiene, stock, HACCP, staffing and training, ensuring profitability and a superb guest experience across shows and events at the venue.

Qualifications

• Must hold Level 3 Food Hygiene Training or equivalent.
• Background in food prep/management with supervisory experience.
• Ability to lead a kitchen team under pressure.

Responsibilities

• Ensure Hygiene, Health & Safety, Employment Law, and Food Safety compliance for staff, visitors and customers.
• Stock ordering and control.
• HACCP implementation.
• Maintain high cleanliness including a 5 star hygiene rating.
• Portion and wastage control.
• Lead and coordinate the kitchen team.
• Manage staff hours for cost efficiency.
• Train and develop junior kitchen staff.
• Maintain staffing records and timesheets.
• Ensure high quality food service for customers and acts.
