Job summary

Langshott Manor Hotel, part of Alexander Hotels, is seeking a Head Chef to lead the Mulberry Restaurant’s kitchen near Horley. You will plan and deliver menus, guide a team of 6 chefs and 2 porters, and drive Rosette-standard dishes for breakfast, lunch, dinner, weddings and events.

You will ensure HACCP compliance, control costs, and nurture talent to grow the restaurant’s reputation and profitability while maintaining exceptional service and quality expectations.

Qualifications

• Experience and passion for food and creating 2/3 Rosette standard dishes from fresh ingredients.
• Ability to work flexible shifts.
• Experience within a quality hotel kitchen environment.
• Team player with an ability and desire to contribute and support team members to develop and achieve.
• Excellent eye for detail and able to deliver consistent standards.

Responsibilities

• Recruitment, training and coaching team of 6 Chefs and 2 Kitchen Porters.
• Menu planning, ordering, delivery, storage, preparation, cooking and service across breakfast, lunch and dinner.
• Develop menu ideas to progress the food offering to Rosette status across all dishes.
• Develop and deliver quality menus for weddings and events.
• Ensure HACCP, food hygiene, health and safety compliance.
• Achieve gross profit targets to enable facility and staffing investment.
• Inspire your team with passion, drive and teamwork across departments.
