Job summary

Dalmeny Park House Hotel in Glasgow is seeking an experienced Head Chef to lead the kitchen team and shape the food offering across weddings, events and dining experiences.

You will manage menus, food safety, stock, and costs while developing and mentoring kitchen staff to maintain exceptional standards in a high-profile hotel. The role offers significant scope for creativity and career progression within RAD Hotel Group.

Qualifications

  • Previous experience as Head Chef or senior sous chef ready to take the next step.
  • Strong background in a quality hotel, restaurant or events environment.
  • Proven experience leading, developing and motivating a kitchen team.
  • Genuine passion for food with creativity in menu development.
  • Strong knowledge of food safety, hygiene and kitchen procedures.
  • Excellent organisation and time-management skills, able to stay calm under pressure.
  • Strong commercial awareness, including stock management, food costs and waste control.
  • Excellent communication skills with colleagues at all levels.
  • Experience with Procure Wizard would be beneficial but not essential.
  • Positive, hands-on approach and ambition to raise standards continually.

Responsibilities

  • Lead and oversee the day-to-day operation of the kitchen, ensuring high standards.
  • Motivate and develop the kitchen team in a positive working environment.
  • Ensure food quality, presentation, consistency and portions across all menus.
  • Develop and introduce seasonal menus reflecting Dalmeny Park standards.
  • Manage food purchasing, stock control, waste and kitchen costs.
  • Maintain all food safety, hygiene and health & safety standards.
  • Collaborate with hotel management to deliver standout food and service for weddings and events.
  • Monitor kitchen performance and identify opportunities to improve standards and profitability.
  • Support recruitment, training and development of kitchen staff.
  • Ensure the kitchen is organized, maintained and prepared for each service.

We're looking for an experienced and passionate Head Chef to lead our kitchen team at Dalmeny Park House Hotel. This is an exciting opportunity for a talented chef to take the lead in a beautiful, high-profile hotel known for its weddings, events and exceptional guest experiences. You'll play a key role in shaping our food offering, developing the kitchen team and ensuring consistently high standards across every service.

What You'll Be Doing:
  • Lead and oversee the day-to-day operation of the kitchen, ensuring every service runs efficiently and to a consistently high standard.

  • Take responsibility for food quality, presentation, consistency and portion control across all menus and services.

  • Work closely with the wider hotel management team to deliver outstanding food and service across weddings, events and hotel dining.

  • Ensure the kitchen is organised, well maintained and fully prepared for each service.
What We're Looking For:
  • Previous experience as a Head Chef, or an experienced Senior Sous Chef ready to take the next step.
  • A strong background in a quality hotel, restaurant or events environment.
  • Proven experience leading, developing and motivating a kitchen team.
  • A genuine passion for food, with creativity and confidence in developing menus.
  • Strong knowledge of food safety, hygiene and kitchen procedures.
  • Excellent organisation and time-management skills, with the ability to remain calm and focused under pressure.
  • Strong commercial awareness, including experience managing stock, ordering, food costs and waste.
  • Excellent communication skills and the ability to work effectively with colleagues at all levels.
  • Experience with Procure Wizard would be beneficial but is not essential.
  • A positive, hands-on approach and the ambition to continually raise standards.
