Job summary

Gateway Hospitality Recruitment is helping a busy country dining pub near Chesham and Berkhamstead recruit a Head Chef. You will lead a brigade, write seasonal menus with local produce and in‑house butchery, and maintain high standards.

Work closely with the General Manager and Front of House to drive quality, cost control and guest experience. There is room for creativity and a salary of £43–45k plus tips, meals on duty and staff discounts.

Qualifications

• Experience leading a busy kitchen brigade.
• Ability to produce fresh, seasonal menus using local produce.

Responsibilities

• Lead and train the kitchen brigade to deliver high-quality dishes.
• Work with GM and Front of House to ensure guest satisfaction.
• Oversee cost control and GP targets.
• Develop and implement seasonal menu ideas.
• Utilise in-house butchery and local suppliers.

Excellent New Head Chef Opportunity with busy Country Dining Pub

Our client is recruiting a Head Chef for their stylish country pub serving all fresh food based close to Chesham & Berkhamstead.This is an opportunity for an exisiting Head Chef or ambitious Sous to take the next step in their career and manage an already popular and busy property. The pub has a field to fork emphasis and uses game and produce sourced from local farms with an in house butchery. The Head Chef will have creative freedom to write seasonal menus. The pub is in the Chiltern Hills so is a popular venue with walkers and visitors all year round.

Head Chef Role

• Working closely with the General Manager and Front of House Team
• Producing Fresh Cooked Food using seasonal products to AA rosette levels
• Use locally sourced meat and game and in house butchery
• Manage, Coach, Train and develop the brigade and achieve GP targets
• Implement new menu ideas and keep focused on customer trends
• Good Communicator & People person
• Experience of Fresh Food volume driven fresh kitchen
