Job summary

The Old Courthouse in Cheltenham, part of Brunning and Price Pubs, is seeking an experienced Head Chef to lead the kitchen. You will drive menu development, manage a high-volume operation, and uphold exceptional quality and presentation.

As a confident leader, you will nurture your team, control stock, GP and labour, and work closely with the pub manager to grow the business. A premium fresh-food environment awaits with competitive rewards.

Qualifications

• Experience as Head Chef or senior kitchen leader in a busy premium fresh-food environment.
• Strong leadership and people management skills.
• Excellent business acumen and cost control abilities.

Responsibilities

As the Head Chef, you will play a pivotal role in menu development, kitchen management, and maintaining the highest standards of food quality and presentation. We are seeking an individual who shares our love for food, embraces creativity, and has exceptional culinary skills. The Old Courthouse was designed in an 'Italianate style' by the surveyor of County Courts, Thomas Charles Sorby and built between 1869 and 1871. It's a truly stunning building with many of its key features still intact for all to see. Our chefs create delicious seasonally inspired menus in the theme of modern British cookery, there will always be hearty classic pub favourites as well as something a little different to excite.

About You...

Our kitchens are dynamic, fast paced, and high volume so you will have experience of being a head chef, chef manager, kitchen manager or senior sous chef in a busy, premium fresh food environment. You will be responsible for the food culture within your pub, working closely with the pub manager to drive the business forward, helping to formulate seasonal menus with our Executive Chefs. We are looking for a confident leader who will nurture their team and create an inclusive and supportive environment. You'll also need excellent business acumen to manage a well-run kitchen, keeping on top of your stock, GPs and labour controls.
