The Hippodrome Casino is seeking a highly skilled Head Bartender to join The Bars team serving God’s Rooftop, the gaming departments and Paddy’s Sportsbook. You will maximise profitability while upholding top service standards.

You will lead a busy bar operation, coach the team, ensure drink quality and manage stock, cash handling and POS procedures. This role requires flexibility for late nights and weekends in a vibrant hospitality setting.

Qualifications

• Proven experience in a Senior Bartender/Head Bartender role in a premium venue.
• Strong leadership and team management capabilities.
• Deep knowledge of cocktails, spirits and bar operations.
• Excellent communication and organisational skills.
• Passion for hospitality and guest service.
• Flexibility to work late nights and weekends.

Responsibilities

• Lead bar operations on shift, ensuring smooth, efficient service.
• Deliver exceptional guest experiences, handling queries professionally.
• Set and maintain high service standards, presentation and team performance.
• Coach the bar team, ensuring strong product knowledge and drink quality.
• Manage peak service periods, adjusting staffing and workflows.
• Oversee cocktail prep, bar setup and adherence to recipes.
• Ensure accurate cash handling, POS use and end-of-shift procedures.
• Support stock control, minimise wastage and keep bar areas organised.
• Promote premium products and maximise sales opportunities.
• Collaborate with wider teams and feedback to management on performance.
