Job summary

Colicci in the United Kingdom is seeking a talented Head Baker to lead our on-site bakery, producing breads, pastries, and sweet treats while developing seasonal products across Colicci sites.

You will train junior bakers, manage production and stock, uphold strict hygiene standards, and collaborate with Head Chefs to keep offerings exciting and commercially successful. This is a hands-on, creative leadership role in a fast-paced environment.

Qualifications

• Experience leading bakery teams and training junior bakers.
• Proven ability to bake breads, pastries, cakes and sweet treats.

Responsibilities

• Lead the bakery team - training junior bakers and driving creativity.
• Bake with passion - breads, pastries, cakes, and sweets using traditional methods.
• Develop seasonal products and limited-edition bakes for seasonal menus.
• Oversee production & stock - ordering, stock takes, stock entry and reconciliation.
• Uphold high hygiene and food safety standards across the kitchen.
• Collaborate with Head Chefs & General Managers to keep offerings exciting and commercially successful.

Job description

We're looking for a talented and creative Head Baker to take charge of our on-site bakery, producing exceptional breads, pastries, and sweet treats, while also developing exciting seasonal products to be featured across the wider Colicci business. If you have a passion for artisan baking, an eye for detail, and love experimenting with seasonal flavours, we want you on our team!

What You'll Be Doing:

• Leading the bakery team - ensuring consistency, training junior bakers, and inspiring creativity.
• Baking with passion - crafting a variety of breads, pastries, cakes, and sweet treats using traditional methods and high-quality ingredients.
• Developing new seasonal products - creating limited-edition bakes to showcase fresh, seasonal ingredients across Colicci's locations.
• Managing production & stock - overseeing ordering, stock take, entering stock, and stock reconciliation to maintain efficiency and reduce waste.
• Ensuring excellence in hygiene & safety - upholding the highest kitchen and food safety standards.
• Collaborating with the Head Chefs & General Managers - ensuring our bakery offerings stay exciting, innovative, and commercially successful.
• A passionate & skilled Baker - with expertise in artisan bread and patisserie.
