Job summary

Kellan Group is seeking a Group Food and Beverage Director in Manchester to lead the full F&B operations of a premium lifestyle hotel, including the ground-floor bar, mezzanine event bar and breakfast service. You will shape a profitable F&B strategy, drive revenue and margins, recruit and develop a high-performing team, and partner with senior stakeholders across an expanding portfolio.

This on-site role requires flexibility to work evenings and weekends as needed and offers salary with bonus

Job description

This permanent Group Food and Beverage Director role in Manchester carries full accountability for the commercial leadership of a lifestyle hotel’s bar, event and dining operations. Working full-time on site, with evenings and weekends as needed, the post-holder shapes and delivers a profitable food and beverage strategy, overseeing the ground-floor bar, mezzanine event bar, breakfast service and related guest offerings. Building a distinctive identity that draws both residents and the local Manchester market is central, alongside driving revenue, margins and satisfaction targets. Candidates should demonstrate strength in commercial planning, premium drinks and menu development, recruitment, training and team leadership. Salary is offered plus bonus. Working pattern: Full-time, hotel-based, with flexibility to work evenings and weekends as operationally required.

Key responsibilities

• Overall leadership and commercial management of the hotelandrsquo;s Fandamp;B operations.
• Development and implementation of a commercially successful Fandamp;B strategy.
• Management of the main ground-floor bar, mezzanine event bar, breakfast operation and associated Fandamp;B services.
• Building a strong identity for the hotelandrsquo;s bar and social spaces, attracting both hotel guests and the local Manchester market.
• Driving revenue, profitability, service standards and guest satisfaction.
• Developing cocktail, premium spirits, wine and food offerings appropriate for a contemporary lifestyle hotel.

Essential experience

• Proven senior Fandamp;B leadership experience within an upscale lifestyle hotel, premium bar group or successful independent hospitality operation.
• Strong commercial understanding of bar operations, beverage margins, labour productivity and profitability.
• Demonstrable experience in developing Fandamp;B concepts and driving external customer revenue.
• Excellent leadership, creativity and operational management skills.
• Good knowledge of the Manchester hospitality market would be advantageous.
• Marriott or other international lifestyle hotel brand experience would be beneficial but is not essential.

This role would suit a commercially astute Fandamp;B leader who can balance strategic thinking with a hands‑on management style, overseeing all food and beverage outlets while driving service excellence, cost control, team development, menu performance, and revenue growth. In addition to supporting the Manchester operation, the role will be involved across a growing hospitality portfolio, including an established London hotel, a major Manchester hotel opening planned for 2027, and a significant London co‑living development scheduled to open in 2028.
