Food and Beverage Director (Cruise)

As a Food and Beverage Director, you will oversee all Food and Beverage Operations onboard, including galleys, restaurants, food outlets, bars, nightclubs, storerooms, and Auxiliary Services. You will lead a team of managers to ensure guests enjoy excellent food and service.

Job Functions

  1. Oversee organization, planning, administration, and daily operations of the Food & Beverage Department according to company policies, procedures, financial plans, and targets.
  2. Direct and control the department to maximize revenue opportunities while fully utilizing service and operational procedures.
  3. Enhance staff efficiency through effective planning, scheduling, communication, and training.

Position Duties and Responsibilities

  1. Lead by example, maintaining the company's Vision statement, Culture Essentials, and Values.
  2. Monitor financial plans for food & beverage supply, ensuring expenditures stay within set parameters, and adjust as needed.
  3. Develop strategies to boost revenue and meet monthly and annual targets.
  4. Ensure high standards of product quality and service, actively monitoring guest experience results and implementing improvements.
  5. Analyze and plan daily, weekly, monthly, and yearly operations for efficiency.

Regulatory Responsibility & Authority

  1. Report directly to the Hotel Director regarding health, environmental, safety, and security matters within your responsibilities.
  2. Ensure compliance with all regulatory procedures and protocols, including GHESS and VSP Manual standards.
  3. Apply Occupational Health & Safety policies effectively during all activities.

Environmental Responsibilities

  1. Ensure department compliance with environmental policies and procedures.
  2. Verify all personnel have completed required environmental training before duty assignment.

Qualifications:

  • Fluency in English.
  • Diploma or Degree in Hospitality, Hotel Management, or related field, or relevant technical training and industry experience.
  • Minimum 5 years of management experience in Food Operations on cruise ships, resorts, or full-service hotels.
