Job Description

Scope of Position

Reporting to the sous chefs, you will lead and manage the breakfast section of the kitchen, overseeing and guiding commis and demi chef de parties. Your role includes assisting sous chefs in food preparation and service, ensuring standards are met, and maintaining cleanliness and organization of equipment and utensils.

Responsibilities include:

  1. Leading and managing the breakfast kitchen section, ensuring production, service, and hygiene standards are upheld.
  2. Following procedures, methods, and recipes as communicated.
  3. Managing correct storage, rotation, and labeling of food, equipment, and dry goods.
  4. Collaborating with sous chefs on stock ordering and deliveries.
  5. Training demi chefs, commis chefs, and apprentices to meet standards.
  6. Participating in dish development and maintaining quality standards across outlets.
  7. Engaging in projects to enhance kitchen operations.
  8. Explaining services clearly to guests, visitors, and staff.
  9. Responding promptly to service needs.

Additional duties include covering for absent line managers or senior staff and working in different departments or restaurants as required.
