Job description

Scope of Position

Reporting to the sous chefs, you will lead and manage the breakfast section of the kitchen, overseeing and coordinating with commis and demi chef de parties. Your responsibilities include assisting sous chefs in food preparation and service, ensuring adherence to Raffles and Mauro’s standards, and maintaining cleanliness and organization of equipment and utensils.

Responsibilities:

  • Lead and manage the breakfast kitchen section, ensuring production, service, and hygiene standards are met.
  • Follow procedures, methods, and recipes as communicated.
  • Ensure proper storage, rotation, and labeling of food items, equipment, and dry goods.
  • Coordinate with sous chefs on stock ordering and deliveries.
  • Train demi chefs, commis chefs, and apprentices to uphold standards.
  • Participate in the development and production of dishes across outlets, maintaining quality standards.
  • Engage in projects aimed at kitchen improvements.
  • Provide clear explanations of services to guests, visitors, and staff.
  • Respond promptly to the service needs of guests and staff.
  • Perform additional duties as required, including working in different departments or outlets when necessary.
