Job Description

Scope of Position

Reporting to the sous chefs, you will lead the breakfast kitchen section, managing commis and demi chef de parties, assisting in food preparation and service while maintaining Raffles and Mauro’s standards. You will ensure cleanliness and organization of equipment and utensils.

Responsibilities:

  1. Lead and oversee the breakfast kitchen section, ensuring production, service, and hygiene standards.
  2. Adhere to procedures, methods, and recipes as communicated.
  3. Manage proper storage, rotation, and labeling of food and supplies.
  4. Coordinate with sous chefs on stock ordering and deliveries.
  5. Train demi chefs, commis chefs, and apprentices to uphold standards.
  6. Contribute to dish development and menu planning across outlets.
  7. Engage in projects for kitchen improvement.
  8. Communicate effectively with guests, visitors, and staff about services.
  9. Respond promptly to service needs.
  10. Take on additional duties in the absence of line managers or senior staff.
  11. Perform other tasks, including working in different departments or outlets as required.
Candidate Profile
  • Proven ability to deliver high service levels under pressure.
  • Excellent communication and customer service skills.
  • Strong time management and multitasking abilities, maintaining professionalism.
  • Willingness to contribute to a 24-hour operational schedule when necessary.
