Job Description

The Position

Control the section for which responsible. Ensure the smooth running of the section and maintain the Sofitel Dubai The Obelisk standards. Cook food daily according to business requirements.

DUTIES & RESPONSIBILITIES

  • Report for duty punctually, wearing the correct uniform and name badge at all times.
  • Coordinate with the Chef de Partie to organize shift duties, mise-en-place, production, and service.
  • Take orders from the Chef de Partie and execute them properly.
  • Write daily requisitions for wine, dry store, food, and transfers for approval by the Executive Chef/Executive Sous Chef to ensure high stock rotation.
  • Maintain good employee relations and motivate colleagues.
  • Follow specifications regarding portion size, quantity, and quality as per recipes.
  • Complete daily checklists for mise-en-place and food storage.
  • Attend daily and monthly meetings with the Chef de Cuisine and other relevant meetings.
  • Report machinery and equipment issues to the Chef de Cuisine and follow up on repairs.
  • Check the main information board for updates on banquets and organization details.
  • Keep the section clean and organized.
  • Pass all relevant information to the next shift.
  • Record accidents and sickness in the logbook and report to the management.
  • Monitor personal hygiene and conduct of Commis Chefs in the section.
  • Assist in developing new recipes and menu ideas.
  • Adhere to company policies on fire safety, hygiene, and safety procedures.

Qualifications

Experience:

  • Minimum 1-year experience in food and beverage service.
