Longueville Manor Hotel Ltd in Jersey seeks a Chef de Partie to lead a section in our renowned kitchen. You will work closely with the Sous and Executive Chefs, maintaining five-star standards, mentoring junior chefs and contributing to seasonal menu development.

Candidates should have at least two years in a similar role, hold a professional culinary qualification, and be adept at maintaining HACCP and high hygiene standards. Live-in accommodation may be available.

Qualificações

• Minimum two years' experience as Chef de Partie or strong Demi Chef de Partie.
• Experience in a busy four- or five-star hotel, fine dining or similar high-quality establishment.
• Professional culinary qualification.
• Level 2 Food Hygiene Certificate.
• Excellent organisational and time management skills.
• Strong understanding of food safety, hygiene and kitchen operations.
• Ability to work calmly and effectively under pressure.

Responsabilidades

• Take full ownership of your designated kitchen section.
• Prepare, cook and present dishes to the highest five-star standards.
• Ensure consistency in quality, flavour, presentation and portion control.
• Maintain excellent mise en place and ensure your section is fully prepared for every service.
• Monitor the quality of ingredients and finished dishes, ensuring only the highest standards leave the kitchen.
• Contribute ideas for menu development, seasonal dishes and continuous improvement.
• Supervise, mentor and support Demi Chef de Parties, Commis Chefs and Apprentices.
• Lead your section confidently during service.
• Support the training and development of junior chefs, encouraging high standards and continuous learning.
• Foster a positive, respectful and collaborative working environment.
• Communicate effectively with the wider kitchen brigade to ensure smooth and efficient service.
