Aethos London Shoreditch is seeking a Breakfast Manager to own the service end-to-end, leading a morning team with warmth, pace and precision. You’ll collaborate closely with the kitchen to ensure timely, compliant breakfast service and manage peak periods with calm leadership.

The role suits a morning-focused leader who thrives in a bustling, high-volume restaurant environment and is passionate about guest experience, safety, and operational excellence.

Qualifications

• Experience managing a breakfast service in a hotel or busy restaurant.
• Able to lead a team with warmth, pace and precision.
• Strong hosting skills and ability to read a room.
• Comfortable with cost of sale and labour in a high-volume setting.
• Eligible to work in the United Kingdom.

Responsibilities

• Lead breakfast service daily from the floor, from set-up through to a clean handover into day service.
• Run pre-shift briefings and manage the flow at peak, seating, timings and table turns.
• Work hand in hand with the kitchen on timings, standards, dietaries and allergens, including breakfast for In-Room Dining.
• Recruit, train and develop the breakfast team, and build rotas that match the team to the covers.
• Own breakfast stock, waste and cost of sale, and drive the barista and à la carte offer.
• Keep us right on food safety, HACCP, allergens and health and safety.
