Job summary

Aethos London Shoreditch is seeking a Breakfast Chef to own the most important meal of the day, leading breakfast from prep to plate with fresh, seasonal dishes in a high-quality kitchen.

You will embrace an early-start role, manage mise en place, uphold HACCP and allergen controls, and work closely with front-of-house to deliver a warm guest experience while supporting menu development and dietary options.

Qualifications

• Proven experience as a Breakfast Chef or Chef de Partie.
• Current Food Hygiene Level 2 certificate.
• Strong breakfast cookery skills, eggs cooked every style.
• Good knowledge of allergens and dietary requirements.

Responsibilities

• Own daily mise en place and prep for the breakfast service.
• Cook and plate à la carte and buffet breakfast items to brand standards.
• Manage the breakfast buffet: replenishment, presentation and waste control.
• Deliver in-room breakfast orders accurately and on time.
• Uphold food safety, HACCP, allergen labelling and temperature controls.
• Maintain kitchen cleanliness and food hygiene compliance.
• Handle stock for the breakfast section: ordering and rotation.
• Liaise with suppliers and escalate quality or supply issues.
• Collaborate with front-of-house for a smooth guest experience.
• Contribute ideas to breakfast menus and dietary options.
• Assist and train commis chefs and kitchen porters where needed.
• Cover other kitchen sections as required.
