Qualifications

• Proven experience as Bar Manager or Assistant Bar Manager in a high-volume venue.
• Deep knowledge of spirits, wines, beer, cocktails and current beverage trends.
• Understanding of GP targets, stock control, inventory systems.
• Ability to train, coach, and develop junior staff.
• Calm, high-pressure leadership with strong time management.

We're hiring: Bar Manager

We are seeking a creative, driven, and experienced Bar Manager to lead our beverage operations and set the standard behind the bar across our dynamic venue ecosystem.

As Bar Manager, you will take full ownership of the bar department—from curating exceptional drink programs and managing stock to mentoring staff and driving profitability. You will champion a culture of speed, precision, and authentic hospitality, ensuring that every cocktail served, pint poured, and coffee brewed reflects the personality and high standards of The Walcot Group.

Key Responsibilities:

• Leadership & Operations: Lead day-to-day bar operations, manage shift rotas, and foster a positive, high-performing team culture.
• Beverage Program & Creativity: Curate seasonal drink menus, develop cocktail specs, and maintain strong supplier relationships to ensure product quality and variety.
• Financial Control: Oversee bar inventory, conduct stock takes, manage GPs, minimize waste, and handle cash reporting accurately.
• Quality & Compliance: Train staff on bartending techniques, standard recipes, and service flow while maintaining strict food safety, hygiene, and licensing standards.
• Guest Experience: Lead by example on the floor during peak hours, creating a warm, energetic environment for our guests and handling feedback with grace.

What we're after:

• Proven Experience: Successful track record as a Bar Manager or Assistant Bar Manager in a high-volume restaurant, pub, or cocktail bar setting.
• Beverage Expertise: Deep knowledge of spirits, wines, craft beer, classic cocktails, and current beverage trends.
• Business Acumen: Strong understanding of GP targets, cost control, inventory management systems, and basic financial metrics.
