Apex Hotels in Dunblane is seeking an Assistant Restaurant Manager to support the Restaurant Manager and lead daily dining operations with energy and guest focus.

You will drive service standards, coach the team, manage resources and costs, and help launch a new restaurant concept, shaping the guest experience from day one. This is a great step for an ambitious hospitality professional aiming to progress in a people-centred hotel group.

Qualifications

• Experience leading restaurant teams and delivering service excellence.
• Strong communication and relationship-building skills.
• Rota planning and labour management experience.
• Commercial awareness with budgeting and cost control.
• Confident using hospitality systems and MS Office applications.

Responsibilities

• Support the Restaurant Manager in delivering outstanding guest experiences and achieving departmental goals.
• Lead, motivate, coach, and develop the restaurant team to deliver exceptional service standards.
• Monitor business levels and plan resources to ensure smooth operations during busy periods.
• Conduct pre-service and post-service briefings to drive engagement and operational excellence.
• Maintain high standards of cleanliness, presentation, and compliance.
• Actively manage guest feedback and implement improvements to enhance the customer experience.
• Support stock control, inventory management and cost-control procedures.
• Assist with payroll forecasting, rota management, and achieving budgets.
• Collaborate with hotel colleagues to maximise sales opportunities and drive revenue growth.
• Deputise for the Restaurant Manager and act as Hotel Duty Manager when required.
