Jobbeschreibung

Surrounded by eleven acres of countryside and wooded valleys, Dalhousie Castle embodies the timeless charm of a storybook fairytale.

An exciting time to join the team at Dalhousie Castle. Dalhousie Castle has entered an exciting new chapter. Following an extensive refurbishment and the reopening of the hotel six months ago, we are continuing to develop our Food & Beverage offering and build an exceptional team to take the Castle forward. We are now looking for an enthusiastic and driven Assistant Restaurant Manager to join our team and play an important role in the continued development of our main hotel restaurant. Our restaurant celebrates the very best of Scotland, with a focus on locally sourced, sustainable seafood and expertly prepared grilled meats. We are looking for someone who shares our passion for great food, exceptional service and creating memorable experiences for our guests. This is an excellent opportunity for an ambitious hospitality professional who wants to develop their leadership skills, contribute ideas and help shape the future of our restaurant.

Role

As Assistant Restaurant Manager, you will work closely with the Restaurant Manager to oversee the day‑to‑day operation of the restaurant, ensuring consistently high standards of service and an exceptional guest experience. You'll be a visible, hands‑on leader who takes pride in developing people, creating a positive working environment and bringing energy and personality to every service. Working alongside the Restaurant Manager and wider Food & Beverage leadership team, you will:

  • Support the day‑to‑day running of the restaurant, ensuring smooth and efficient service.
  • Lead from the floor, setting the standard for warm, attentive and professional hospitality.
  • Help develop, coach and motivate the restaurant team, supporting colleagues to build their skills and confidence.
  • Create a positive, collaborative working environment where people feel supported and encouraged to grow.
  • Maintain high standards of service, presentation and attention to detail.
  • Develop a strong understanding of our menu, with a particular focus on local and sustainable seafood and quality grilled meats.
  • Ensure the team can confidently discuss dishes, ingredients and preparation methods, making knowledgeable recommendations to guests.
  • Work closely with the kitchen team to ensure excellent communication and a seamless dining experience.
  • Handle guest feedback, requests and queries professionally, ensuring any issues are resolved promptly.
  • Assist with team training, onboarding and the continued development of our service standards.
  • Support the Restaurant Manager with rotas, stock control, ordering and other operational responsibilities as required.
  • Identify opportunities to improve service, processes and the overall guest offering.
  • Work collaboratively with the wider Food & Beverage team to deliver a consistent experience across the hotel.
About You

We're looking for someone who is passionate about hospitality, confident leading a team and motivated to take the next step in their career. You may already be working as a Head Waiter, Restaurant Supervisor, Assistant Restaurant Manager or in a similar role and be ready for a new challenge within a unique hotel environment. You'll ideally have:

  • Previous experience in a quality restaurant or hotel environment.
  • Strong knowledge of restaurant service and a genuine passion for food and hospitality.
  • The confidence to lead service and support the day‑to‑day running of a restaurant.
  • Excellent communication and interpersonal skills.
  • A natural ability to motivate, coach and develop team members.
  • A positive, proactive and hands‑on approach.
  • The ability to remain calm, organised and decisive during busy services.
  • High standards of presentation, service and attention to detail.
  • A genuine interest in Scottish produce, sustainable seafood and quality ingredients.
  • A willingness to contribute ideas, embrace change and help improve the operation.
  • The ambition to continue learning and develop towards greater leadership responsibility.

Most importantly, we're looking for someone who leads by example, enjoys working with people and takes genuine pride in creating memorable guest experiences.

Our Restaurant

Our main hotel restaurant is an important part of the Dalhousie Castle experience. With a focus on locally sourced, sustainable seafood and expertly prepared grilled meats, we want to create a distinctive dining experience that combines quality ingredients with warm, thoughtful hospitality. As Assistant Restaurant Manager, you'll have the opportunity to help bring this offering to life, developing your team's product knowledge, refining service standards and contributing ideas to continually improve the restaurant. You'll work closely with the Restaurant Manager and kitchen team to ensure that our food, service and overall guest experience work seamlessly together.

Why Join Dalhousie Castle?

This is a fantastic opportunity to join us as we continue to develop our newly refurbished hotel and its Food & Beverage offering. Six months into our new chapter, we're building on the foundations already in place and looking to continually improve the way we work, develop our people and enhance the experience we deliver to our guests. You'll become an important part of the restaurant leadership team, with the opportunity to contribute ideas, take on new responsibilities and develop your skills in a supportive environment. There is genuine room to grow, learn and progress for someone who brings enthusiasm, ambition and a passion for hospitality. If you're ready to take the next step in your restaurant career and help shape the future of dining at Dalhousie Castle, we'd love to hear from you.
