Job summary

Mother & 45:33 are opening two cocktail-led venues in Belfast, seeking an Assistant Cocktail Bar Manager to support both concepts. The role involves hands-on leadership, shifts management, and delivery of exceptional guest experiences across both venues.

You will work with the Cocktail Bar Manager, developing bar teams, maintaining cocktail quality, and upholding high service standards while ensuring compliance with licensing and safety requirements.

Qualifications

• Minimum 2 years of management or supervisory experience in a cocktail-led bar or premium hospitality setting.
• Strong cocktail knowledge and passion for drinks, ingredients, techniques and presentation.
• Experience leading busy shifts and training bar teams.
• Hands-on leader who makes decisions and owns service.
• Good commercial awareness with stock, wastage and cost control experience.
• Clear communication, organisation and problem-solving skills.
• Understanding Belfast nightlife, cocktail and music scene.

Responsibilities

• Support the Cocktail Bar Manager with pre-opening planning and launch of both Mother and 45:33.
• Lead day-to-day shifts across both venues, ensuring smooth service and high standards.
• Maintain distinct guest experiences for each bar while upholding shared cocktail standards.
• Recruit, train, coach, and develop bar teams to be confident and knowledgeable.
• Lead from the floor, delivering exceptional customer care and detail-led service.
• Assist with rotas, labour, stock, ordering, wastage, margins and KPIs.
• Maintain drinks presentation, bar organisation and cleanliness.
• Take ownership of service and operations in the manager's absence.
• Ensure licensing, health and safety, and hygiene compliance.

Assistant Cocktail Bar Manager – Mother & 45:33

Opening in Belfast this year, Mother and 45:33 will be two distinctive new cocktail-led venues, each with its own style, atmosphere and offering.

Mother will be an innovative and stylish cocktail bar featuring a roof terrace, dispense bar and regular DJs.

45:33 will be an intimate listening bar with a conceptual cocktail list, a high-fidelity sound system and a curated DJ programme.

While the venues will operate independently, they will work closely together on production.

We are looking for an experienced Assistant Cocktail Bar Manager to support the Cocktail Bar Manager across both venues and help bring their individual concepts to life.

The role

This is a key, hands-on management position supporting the successful opening and ongoing operation of both bars.

As Assistant Cocktail Bar Manager, you will work closely with the Cocktail Bar Manager to lead shifts, support and develop knowledgeable bar teams, maintain exceptional drinks and service standards and help create memorable guest experiences across both venues.

What you’ll do:

• Support the Cocktail Bar Manager with the pre-opening planning and successful launch of both Mother and 45:33
• Lead day-to-day shifts across both venues, ensuring smooth service, effective communication and consistently high standards
• Help maintain the distinct identity and guest experience of each bar while supporting shared standards for cocktail production, preparation and quality control
• Support the recruitment, training, coaching and development of knowledgeable and confident bar teams
• Lead from the floor, setting the standard for exceptional customer care, cocktail knowledge and detail-led service
• Support rotas, labour control, stock management, ordering, wastage, margins and the achievement of agreed KPIs
• Maintain consistently high standards of drinks presentation, bar organisation and cleanliness
• Take ownership of service and operational issues in the absence of the Cocktail Bar Manager
• Ensure compliance with licensing, health and safety, food safety and hygiene requirements

About you:

• At least 2 years’ management or supervisory experience in a cocktail-led bar, premium bar or similar hospitality environment
• Strong cocktail knowledge and a genuine interest in drinks, ingredients, techniques and presentation
• Experience of leading busy shifts and supporting the training and development of bar teams
• A confident, hands-on leader who is comfortable making decisions and taking ownership during service
• Good commercial awareness, with experience of stock control, wastage, labour management or cost control
• A passion for exceptional customer experiences and detail-led service
• Excellent communication, organisational and problem-solving skills
• An understanding and appreciation of Belfast’s nightlife, cocktail and music scene
• Flexibility to work evenings, weekends and holidays
