Palazzo Diner in central Copenhagen is seeking a Head Chef to take the kitchen forward in a high-volume, lively setting. You will lead the daily operation, uphold quality, and shape the menu with management, bringing your own ideas to the plate.

We are looking for a real team leader who can manage food cost, purchasing, inventory and budgets while maintaining strict hygiene standards (HACCP). English is fine; Danish skills are a plus, and evenings/weekends are required.

Qualifications

• Proven Head Chef or strong Sous Chef ready to step up.
• Experience running a high-volume kitchen.
• Strong leadership under pressure.

Responsibilities

• Lead daily kitchen operation and maintain consistent quality.
• Develop the menu with management.
• Lead, train and mentor the team to perform at a high level.
• Own food cost, purchasing, suppliers, inventory and budget.
• Uphold HACCP standards.
• Partner with front of house to ensure smooth service.
