Who We Are

Swiss Butter is a restaurant brand built around a simple idea: steak, fries and our secret sauce, done right, every time. As we grow into new restaurants and markets our aim stays the same: protect what people love about Swiss Butter and deliver it consistently, wherever we go.

We hire you for who you are. We teach you what you need to know. You prove yourself. You grow. We are not for everything.

Summary of Position

The Restaurant Manager owns the total store operating result: P&L, guest experience, people, food safety, standards and compliance. The RM plans the trading day, makes the final T-15 readiness decision, commands through the parallel ARM/Shift Leader/Kitchen Manager structure, owns store-level escalations and ensures truthful commercial, people and operating evidence.

Key Performance Areas (KPAs)
  • Trading-Day Plan & Store Readiness
  • Live Store Command & Guest Outcome
  • P&L, Cost & Cash Control
  • Food Safety, Compliance & Risk
  • People, Certification & Succession
  • Close, Data & Reporting
Duties & Responsibilities

Trading-Day Plan & Store Readiness

  • Read operating data and known conditions, set the day's priorities and run the T-60 briefing.
  • Make the T-15 GO / NO-GO readiness decision using the approved store-operating standard.

Live Store Command & Guest Outcome

  • Command the store through parallel Shift Leader, ARM and Kitchen Manager ownership, intervening on escalation without collapsing role accountability.
  • Own the guest-experience outcome and final escalation/recovery decisions within published authority.
  • Lead high-severity or multi-playbook incidents and interface with Area Manager/Country Head/platform functions as required.

P&L, Cost & Cash Control

  • Control daily commercial/financial signals, labour, food and controllable-cost actions, void/discount authority and cash reconciliation.
  • Where food-cost variance exceeds 2% of theoretical under the current operating standard, require root-cause action and log it by end of day.
  • Independently reconcile the Shift Leader's end-of-day cash count the next morning.

Food Safety, Compliance & Risk

  • Verify food-safety, allergen, legal/compliance and safe-to-operate corrective action; do not author functional standards outside RM authority.

People, Certification & Succession

  • Own store people deployment, scheduling discipline, performance follow-up, development and succession execution.
  • Ensure only appropriately certified people are assigned to roles/stations under the current approved control.
  • Issue final certifications for designated store roles only where the Academy assigns RM as certifier.

Close, Data & Reporting

  • Verify store close and next-morning controls, explicitly carrying forward unresolved issues.
  • Complete DOL/dashboard/daily-log narrative, exception escalation and operating-data evidence truthfully and on time.
Key Performance Indicators (KPIs)
  • T-60 briefing and T-15 GO / NO-GO readiness decision are completed to standard.
  • Store P&L, labour, food cost and controllable-cost actions are actively managed against approved targets.
  • Food-cost variance above 2% of theoretical triggers root-cause action and end-of-day logging under the current standard.
  • Shift Leader cash count receives independent RM next-morning reconciliation.
  • Only appropriately certified employees are independently assigned to roles/stations.
  • DOL, daily log, close, compliance and escalation evidence is complete and truthful.
Qualifications
  • For internal progression, hold current ARM certification and complete the Restaurant Manager Development Plan; external appointments must satisfy People OS hiring rules and equivalent operating experience.
  • Strong whole-store knowledge across FOH, BOH, P&L, labour/food cost, guest recovery, food safety and people leadership.
  • Ability to lead through role owners rather than personally absorbing every operating task.
  • Complete current Restaurant Manager certification before independent store accountability.
Core Competencies
  • Strategic Operational Leadership - Turns strategy and standards into disciplined operating execution.
  • Financial Acumen - Reads P&L and operating signals and converts variance into action.
  • Leadership & Succession - Builds accountable leaders and sufficient successor capacity.
  • Decision Making & Judgment - Acts within authority, escalates correctly and preserves governance.
  • Cross-Functional Collaboration - Works effectively with I MANAGE platform functions while preserving ownership boundaries.
  • Data & Evidence Discipline - Uses verified information, protects system truth and reports exceptions clearly.
Technical Skills

Advanced working knowledge of store P&L, forecasting/deployment, POS/IMS/dashboard controls, food safety, playbook command and people/succession systems. Current Restaurant Manager certification is required before independent store accountability.
