Job Description
- Oversees the production for all banquet and catering events, ensuring that the required mise-en-place and finished products are produced and delivered to the appropriate areas.
- Develops new menus, prepares, tests, and tastes new menu items in collaboration with the Executive Chef.
- Ensures the events culinary team works in a supportive and flexible manner with other departments.
- Reviews banquet event orders (BEO) daily and notes any changes.
- Assists in inventory management and ongoing maintenance of hotel operating equipment and other assets.
- Assists the Executive Chef in banquet menu development and execution.
- Plans and executes multiple banquet functions.
- Prepares and updates the Departmental Operations Manual.
Required Skills
- Ability to plan and execute multiple banquet functions.
- Knowledge of all local health and safety regulations.
- Experience in leading and developing teams.
- Attention to detail, speed, and accuracy in job functions; ability to prioritize, organize, and follow-up; remains calm and uses good judgment to resolve problems.
