Your mission
  1. Responsibility: Assists in overseeing all aspects of kitchen operations. Maintains and ensures unit compliance with Bella & Bona policies and procedures, inventory procedures, and all applicable HACCP guidelines.
  2. Assists with planning, organizing, directing, coordinating, scheduling, and delegating responsibility to the staff.
  3. Ensures the staff meets the kitchen's KPIs daily. Assists the Kitchen Manager as assigned. Ensures adherence to all systems, procedures, and policies.
  4. Coordinates with the city manager and creates, maintains, and implements all unit standard operating procedures.
  5. Assists in controlling food costs and usage by following proper procedures, standard recipes, and waste control procedures. Directly supervises all assigned subordinate staff.
  6. Assists in training staff and kitchen personnel in the safe operation of all kitchen equipment & utensils, cleanliness, and sanitation practices; ensures all team members have the right tools, knowledge, and equipment to do their jobs safely & effectively.
  7. Evaluates employee performance and provides guidance and feedback to assigned staff. Oversees daily prep to ensure the operation has the appropriate amount of product for the day and that the product meets our quality standards; ensures prep lists are completed accurately and communicated clearly.
  8. Performs daily line checks before production and detailed station closing. Assists with daily and weekly inventory and communicates the items to management.
  9. Checks and maintains proper food holding and refrigeration temperature control points.
  10. Manages daily & weekly deep cleaning and facility maintenance duties; maintains appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment, and food storage areas.
Your profile

Education: Specialized or technical training.

Experience: 2 years.

Expertise: One year plus experience in a supervisory role within a high-volume, full-service kitchen environment. Strong track record of success in previous assignments demonstrating upward career mobility. Demonstrated knowledge of pertinent health and safety laws and regulations.
