The Chef D’Cuisine is responsible for managing the activities, processes, procedures, and training of chefs, cooks, and other kitchen staff engaged in food preparation and cooking. The role ensures high-quality, efficient, and effective food service and products. The Chef D’Cuisine will also enhance the dining experience for guests by offering quality food while maintaining operational culinary excellence.
Responsibilities
Where You'll Make an Impact
- Develop and manage the budget and food cost percentages. Train kitchen staff in safe operating procedures for all equipment, utensils, and machinery.
- Establish maintenance schedules for all equipment within the assigned food venue, following manufacturer instructions.
- Serve as the creative manager in determining menus and food offerings.
- Develop staff through interviewing for new hires, performance management, disciplinary counseling, and conducting evaluations.
- Manage restaurant personnel in preparing menu offerings, ensuring nutritional value and accommodating dietary requests such as low-fat, low-sodium, vegetarian, and low-calorie meals.
- Oversee food costs and establish purchasing specifications for food and beverage items.
- Implement programs to control and reduce workplace injuries.
- Plan food plating to maximize visual appeal and minimize waste.
- Perform other duties as assigned.
Qualifications
A Few Must Haves
- Education: A four-year degree in a related field or equivalent work experience.
- Experience: 3-5 years of experience as a Kitchen/Restaurant Supervisor or Sous Chef.
- Ability to comply with all state gaming regulations, including obtaining necessary licenses.
Physical Requirements
- Ability to stand for long periods without sitting or leaning.
- Capability to handle multi-tasking, exerting up to 50 pounds of force occasionally, and lifting, carrying, pushing, or pulling objects weighing up to 50 pounds.
- Ability to walk continuously during shifts.
- Ability to bend, stoop, reach, and handle items like oven pans and trays.
