Job summary

ATCO Frontec is seeking a Red Seal Baker to join our Camp Services team at Artemis Blackwater Mine in central British Columbia. The Baker will manage all bakery operations, meet guests’ needs for pastries and baked goods, follow recipes and plating guides, and ensure sanitation standards, inspecting food and equipment daily, weekly and monthly.

The position offers 28.21 CAD per hour with a 28 days on /14 days off rotation.

Qualifications

• Red Seal Baker certification required.
• 5 years of commercial baking in high-volume camp/institutional food service.
• 2 years in a lead role.
• Valid food safety certificate.
• Ability to prioritize and multitask.
• Professional communication skills, oral and written.

Responsibilities

• Oversees preparation of baked goods according to duties assigned, focusing on quality, appearance, production and stocking levels, and minimizing leftovers and waste.
• Carry out bake-off baking to produce a variety of products in required quantities.
• Ensure all prepared products are recorded on production records or logs.
• Prepare baked goods for menu and catered events according to standardized recipes and proper cooking times.
• Train and direct subordinate food service workers to ensure safety and quality standards.
• Maintain sanitary standards in all serving and storage areas and supervise staff accordingly.
• Maintain rotation of baked goods to minimize spoilage and waste.

Job description

ATCO Frontec is seeking a Red Seal Baker to join our Camp Services team at Artemis Blackwater Mine in central British Columbia, approximately 160km southwest of Prince George and 450km northeast of Vancouver. The Baker manages and leads all aspects of the Bakery at the camp. It involves meeting guests’ needs related to pastries, baked goods, recipes, plating guides, and sanitation standards. They are responsible for inspecting food and equipment on a daily, weekly, and monthly basis.

The hourly wage for this role is $28.21 / hour.

The rotation for the role is 28 days on, and 14 days off.

Responsibilities:

• Oversees preparation of baked goods according to duties assigned, and number guest in-house, with a focus on quality, appearance, adequate production and stocking levels in all serving areas, and minimizing leftovers and product waste.
• Carry out bake-off baking responsibilities to produce a variety of products in sufficient quantities according to specifications
• Ensure that all prepared products are correctly recorded on production records.
• Required scratch baking creativity and experience.
• Manages high volume of baked goods required daily
• Order food inventory as required by maintaining food costs
• Adhering to allergen signage with food items displayed.
• Trains and directs subordinate food service workers, ensuring compliance with company and client safety requirements.
• Supervises subordinate staff to ensure the highest sanitary standards are maintained in all food serving and storage areas in accordance with company, client, and governmental requirements.
• Prepares all baked goods for the menu and catered events according to standardized recipes and ensuring baked items are cooked at the proper temperature and at the proper length of time.
• Maintains established baked goods rotations in storage in order to minimize spoilage and waste
• Operates food services equipment in a safe manner and according to established policies and procedures.
• Follows principles of sanitation and safety in handling food, work area and equipment
• Ensure that all prepared products are correctly recorded on daily kitchen logs for hot and cold holding, proper labeling, temperature logs and daily cleaning schedules.
• Acts in a courteous, efficient, and friendly manner in all customer and employee interactions.
• Clean kitchen, utensils and equipment.
• Other duties as assigned

Qualifications:

• Red Seal Baker certificate is required
• 5 years commercial baking in high volume camp/institutional food service, including 2 years in a lead role
• The successful candidate must hold a valid food safety certificate
• Experience in high volume baking
• Ability to prioritize and multitask
• Professional communication skills, oral, and written
• Work well under pressure
