Job summary

Fairmont Banff Springs is seeking an Overnight Baker to craft artisan breads and baked goods, ensuring top quality overnight production. You will follow standardized recipes, monitor fermentation, and maintain strict food safety standards to support breakfast, banquet, and restaurant operations.

Starting rate is $21.82 per hour with increases after six months and at three years to $27.50 per hour. A culinary diploma and Canadian Food Handler certification are preferred.

Qualifications

  • Minimum 2 years of bakery production experience in a high-volume setting.
  • Experience producing artisan breads, sourdough, and laminated doughs.
  • Culinary diploma or equivalent training is an asset.
  • Valid Canadian Food Handler Certification.
  • Strong knowledge of baking techniques, fermentation, and bread production.
  • Excellent attention to detail and commitment to quality.
  • Ability to work independently and overnight shifts.
  • Strong organizational and time-management skills.
  • Positive attitude with a collaborative team approach.

Responsibilities

  • Prepare and bake artisan breads, rolls, sourdoughs, laminated doughs, and specialty items from scratch as required.
  • Run overnight bakery production according to recipes, schedules, and quality standards to support breakfast, banquet, and restaurant operations.
  • Maintain food safety, storage, labeling, FIFO, and temperature controls per hotel and regulatory requirements.
  • Operate and maintain commercial bakery equipment including mixers, sheeters, ovens, proofers, blast freezers, fryers, and steamers.
  • Assist culinary leadership with daily production planning and contribute ideas to improve recipes and processes.

As our Overnight Baker, you’ll play a vital role in ensuring every morning begins with fresh, handcrafted products that reflect the quality and standards of our award‑winning hotel.

Working under our “Make It Count” philosophy, you will produce exceptional baked goods that set the standard for each day’s service while maintaining the highest levels of food safety, craftsmanship, and operational excellence.

Starting Rate: $21.82 per hour. Hourly rates increase after six months, then yearly to three years. At three years the pay rate for this role would be $27.50.

Job Duties
  • Prepare and bake a variety of artisan breads, rolls, sourdoughs, laminated doughs, and specialty baked goods, completing all stages of production—from mixing and scaling to proofing, baking, and finishing—while ensuring at least 75% of products are made from scratch.
  • Execute overnight bakery production according to standardized recipes, production schedules, and quality standards to support breakfast, banquet, and restaurant operations, while monitoring dough development, fermentation, proofing, and baking for consistent results.
  • Maintain exceptional food safety and sanitation standards by following proper food handling, storage, labeling, date coding, FIFO rotation, temperature monitoring, and cleanliness procedures in compliance with hotel and regulatory requirements.
  • Safely operate and maintain commercial bakery equipment including mixers, sheeters, ovens, proofers, blast freezers, fryers, and steamers, while keeping workstations organized, fully stocked, and prepared for a seamless handover to the day shift.
  • Support continuous improvement and teamwork by assisting culinary leadership with daily production planning, contributing ideas to enhance recipes and processes, and consistently upholding the hotel’s culinary, grooming, and operational standards.

  • Culinary diploma or equivalent training is considered an asset.

  • Excellent attention to detail and commitment to producing consistent, high‑quality products.
  • Ability to work independently and efficiently during overnight shifts.
