Mission: As a Chinese Chef at Newrest, you’ll bring your expertise in Chinese cuisine to prepare and present exceptional dishes for our airline clients. Your skills will ensure high-quality, authentic meals that meet airline standards and delight passengers from around the world.

Responsibilities:

  1. Master and execute a variety of authentic Chinese dishes.
  2. Demonstrate a complete understanding of the required menus.
  3. Prepare meats, fishes, pastas, side dishes, and garnishes following recipes carefully.
  4. Roast, fry, steam, grill, bake meats, fishes, vegetables as required by recipes.
  5. Prepare food by cleaning, peeling, mincing, cutting, chopping, mixing, portioning, measuring ingredients, packaging, and labelling.
  6. Maintain proper food production records, ensure all equipment is operable.
  7. Responsible for sanitation and post-service setup.
  8. Notify manager of any maintenance repairs needed or unsafe conditions.
  9. Taste and smell prepared food to determine quality and palatability.
  10. Monitor temperature of hot and cold foods during preparation and service to ensure temperature goals are met prior to steam table transfer and maintained throughout meal service.
  11. Study recipes assigned by the Executive Chef, prepare, and coordinate all meals.
  12. Coordinate preparation for the following day’s menus.
  13. Manage the prep list to plan duties.
  14. Ensure standard of recipes to maintain consistent quality.
  15. Assist in the coordination and execution of special menus for client presentations.
  16. Ensure all kitchen equipment is in working order and kept clean at all times.
  17. Wear food safety equipment while on duty, use work safety equipment.
  18. Maintain good portion control and forecast of production.
  19. Practice proper grooming, personal hygiene, and use safety equipment.
  20. Communicate effectively with kitchen personnel & other unit departments.
  21. Comply with all company service standards, health & safety procedures, food safety requirements.
  22. Perform other duties as assigned.
