Job summary

Aramark is recruiting a skilled Chef Manager to support the Executive Chef at theDonald Gordon Hotel and Conference Centre on Queen’s University campus in Kingston, Ontario. You will oversee day-to-day food service and catering operations, leading a team of food service associates.

Reporting to the Executive Chef, you will ensure high quality guest meals, meetings and events, while managing a unionized team and maintaining safety and cost controls.

Qualifications

  • 3-5 years of experience in a similar high-quality food service role.
  • Culinary degree or diploma required.
  • Experience managing in a unionized environment is an asset.
  • Proficient with spreadsheet and word processing tools.
  • Strong interpersonal and communication skills.
  • Excellent organizational and time management abilities.
  • Flexible to work evenings and weekends.
  • Effective verbal and written communication.

Responsibilities

  • Oversee day-to-day operation for hotel guest meals, meetings and events.
  • Direct a unionized team of up to 6 cooks and dishwashers.
  • Ensure compliance with Aramark standards, health and safety and policies.
  • Develop operational forecasts and analyze variances in costs and activities.
  • Schedule staff and monitor daily labour metrics.
  • Manage inventory controls (food, labour, costs).
  • Support monthly inventory processes and reporting.
  • Deliver high quality, courteous service to customers.
  • Collaborate on recruitment, staffing, labour management, training and HR policy adherence.
  • Assist in disciplinary action with the Executive Chef and HR.
  • Develop staff to attain standards of performance.
  • Monitor equipment repair and maintenance.

Job Description

Aramark is recruiting a skilled Chef Manager to support the Executive Chef at our culinary operations for the Donald Gordon Hotel and Conference Centre located on Queen’s University campus in Kingston, Ontario.

Reporting to the Executive Chef, the Chef Manager is responsible for overseeing the day-to-day food service and catering operations. This role includes planning, organizing, directing, controlling, and evaluating all aspects of the operation, while providing strong leadership and guidance to a team of food service associates.

Job Responsibilities
  • Ensure the smooth day-to-day operation, with flexibility to support front-line duties as needed for hotel guest meals, meetings and public catering functions such as weddings, conferences, etc.
  • Manage and direct a unionized team of up to 6 cooks and dishwashers
  • Implements and lead compliance on all Aramark operating standards, legislated standards, including company policies and procedures, Health and Safety Standards and Safe Food Handling
  • Develop operational forecasts for each period and analyze variances in costs and operational activities
  • Overseeing staff scheduling, monitor daily labour metrics
  • Manage inventory controls, including food, labour and direct costs
  • Support monthly inventory processes and reporting
  • Ensure delivery of high quality, courteous service to all customers
  • Collaborate with the team on recruitment, staffing, labour management, progressive discipline and training and HR policy administration
  • Assist in disciplinary action alongside the Executive Chef and Human Resources
  • Develops and motivates staff to attain proper standards of performance
  • Monitor equipment repair and maintenance
Qualifications
  • Minimum 3-5 years' experience in a comparable role within a high quality food service environment
  • A culinary degree or diploma is required
  • Experience managing in a unionized environment is an asset
  • Proficient in computerized systems, including spreadsheet and word processing applications.
  • Self-motivated with strong interpersonal and communication skills
  • Excellent organizational and time management abilities
  • Demonstrates a positive attitude with a strong customer service orientation
  • Flexible and available to work evenings and weekends as required
  • Effective verbal and written communication skills
