Job Description

Position: 2nd Cook

Location: Terrace, BC

Rotation: 28 days in / 14 days out

Wage: $23.00 per hour

Scope

The 2nd Cook will prepare, portion, cook, and serve a variety of hot and cold foods for various meal periods and events, following all safety and quality standards. Responsibilities include tasks delegated by the 1st Cooks, Sous Chefs, and Executive Chef.

Primary Responsibilities
  1. Follow all Sodexo HACCP policies and procedures.
  2. Use HACCP handheld thermometers and implement corrective actions for out-of-range results.
  3. Collect production and HACCP data points for each meal period.
  4. Manage stock rotation and label products accurately.
  5. Operate kitchen equipment such as ovens, fryers, food processors, mixers, steamers, and tilt skillets.
  6. Perform cooking duties independently, preparing food for service.
  7. Prepare fruits, vegetables, meats, poultry, and fish for culinary use.
  8. Produce dishes using classical and contemporary techniques, ensuring high quality.
  9. Maintain cleanliness and sanitation of workstations and equipment.
  10. Follow safety policies, report accidents, and attend safety training.
  11. Adhere to grooming and dress code standards.
  12. Participate in site travel and adhere to schedules and policies.
Qualifications
  • Interprovincial ‘Red Seal’ or equivalent certification.
  • Minimum 10 years’ experience as a Journeyman in high-volume settings.
  • Experience in training, supervising, and scheduling staff.
  • Proficiency in Microsoft Office and basic baking knowledge.
  • 3-5 years of food prep in high-volume environments and HACCP experience.
  • Ability to work day or night shifts and pass a drug and alcohol test.
  • Strong personal integrity, appearance, and demeanor.
  • Ability to work in a multicultural environment and follow anti-bullying policies.
