Job summary

Celebrity Cruises seeks an experienced CDP Pastry to lead the pastry galley aboard the ship. You will manage daily production, supervise staff, and ensure high standards of quality and presentation for all desserts and pastries on the menus.

You will forecast production, minimize waste, and maintain strict sanitation per USPH rules. Strong leadership, communication and guest-service focus are essential in this dynamic cruise environment.

Qualifications

• Two years' experience as a CDP Pastry in upscale hospitality (hotel/cruise ship preferred).
• Strong management skills in a multicultural environment.
• Excellent communication, problem solving and interpersonal abilities.
• Superior customer service, teambuilding and conflict resolution skills.

Responsibilities

• Ensures smooth operation and control of the pastry galley and daily production per company policies.
• Directs, coaches, supervises and evaluates pastry staff (with Assistant Pastry Chef).
• Oversees production, quality and presentation of pastry and desserts for daily menus.
• Prepares production forecasts and records leftovers to control waste and food costs.
• Supervises pastry display setup in buffets.
• Ensures compliance with USPH rules and sanitation standards daily.
• Maintains cleaning schedule for pastry shop and minimizes equipment damage.
• Prepares for USPH inspections and coordinates pantry readiness.
• Manages requisition and transport of items from main stores to pastry galley.
• Ensures recipes and yields align with company standards.
• Assists in daily pastry consumption recap as requested by Executive Chef.
• Ensures staff punctuality and proper uniforms aligned with policy.
• Familiar with Time and Attendance procedures and work schedules.
• Supports guest and crew inquiries and participates in required training.
