• Certificate IV in Commercial Cookery or equivalent meeting ANZSCO for Cook.
• Current Food Safety Supervisor Certificate.
• Minimum 1 year of cook experience in a fast-paced, full-service restaurant.
• Proven ability to produce scratch-made stocks, sauces, and components.
• Hands-on butchery, trimming, and portioning skills with primal meats and whole poultry.
• Strong HACCP knowledge and food safety compliance.
• Full availability across evenings, weekends, and peak trade periods.
• Experience with wood-fired pizza ovens and fresh pasta production.

Responsibilities

• Prepare, season, and cook food to order across the full service menu.
• Prepare doughs, stocks, sauces, and dressings from raw ingredients.
• Portion, butchery, and fillet meats and poultry in-house.
• Manage stock ordering, supplier relationships, and food costs.
• Uphold hygiene, prep standards, and clean-down routines.
