Job summary

Paddock Bakery in Geelong is seeking an experienced Baker to join our growing team. This full-time role involves early starts between 12–3am, and collaborating closely with Head Baker and Head Chef to produce bread and pastries daily.

We value pride in craft, teamwork in a fast-paced environment, and a commitment to high quality. Pastry experience is a plus, with sponsorship unavailable and Australian working rights required.

Qualifications

• Minimum 3 years' experience in a professional bakery environment.
• Hold a relevant baking trade qualification.
• Strong knowledge of bread production, fermentation, shaping and baking.
• Be reliable and comfortable with early morning starts.
• Understand and maintain high food safety and hygiene standards.

Responsibilities

• Mixing, shaping, proving and baking a range of high-quality breads and baked goods.
• Maintaining consistency, quality and presentation across all products.
• Following production schedules and ensuring daily production targets are met.
• Operating, cleaning and maintaining bakery equipment and machinery.
• Monitoring stock levels and assisting with production planning.
• Maintaining high standards of food safety, hygiene and workplace cleanliness.
• Working collaboratively with the Head Baker, Head Chef, Bakery and Pastry teams.
• Supporting the training and development of junior team members where required.
