Job summary

Hilton Perth Waterfront is seeking a Venue Bar Manager for 18 Knots Rooftop Bar in Perth. You will lead day-to-day operations, supervise the bar team, manage beverage costs, stock, rostering and drive revenue through promotions while delivering exceptional service and a warm, engaging guest experience.

The role requires hands-on leadership, strong team development, and the ability to lead during peak service periods. RSA certification and WA compliance are essential.

Qualifications

• Minimum 12 months Australian working rights; flexible to evenings, weekends and public holidays
• Previous Bar Manager or Venue Manager experience in high-volume hospitality
• Strong leadership, coaching and team development abilities
• Sound commercial understanding including beverage cost control and stock management
• Excellent communication and organisational skills; able to lead in a fast-paced environment
• RSA certification or ability to obtain per WA requirements

Responsibilities

• Lead day-to-day operations of 18 Knots Rooftop Bar, ensuring service excellence and brand standards
• Coach, motivate and develop the bar team; provide ongoing training and feedback
• Create memorable guest experiences and manage feedback to improve service
• Drive revenue through upselling, promotions and revenue-generating initiatives
• Oversee beverage inventory, stock takes and ordering; monitor costs to meet targets
• Prepare and manage rosters in line with Australian hospitality awards
• Support marketing promotions and collaborate with operations, sales and marketing
• Maintain HACCP, WHS and food safety; ensure frontline and back-of-house compliance
• Collaborate with Operations Manager and hotel departments for seamless operations
• Lead from the front during peak service times; hands-on leadership

As our Venue Bar Manager, you will lead the day-to‑day operations of 18 Knots Rooftop Bar, creating a vibrant and welcoming atmosphere for our guests while inspiring your team to deliver exceptional service.

You’ll take ownership of the venue’s daily performance, from leading and developing your team to managing beverage costs, stock, rostering and operational standards. Working closely with our Operations, Sales and Marketing teams, you’ll also help bring new ideas and promotions to life, creating opportunities to grow revenue and keep our guests coming back.

You’ll be a hands‑on leader who isn’t afraid to step into service during busy periods, build relationships with our guests and lead from the front.

Responsibilities

Here’s what you’ll do during a typical day:

• Venue Operations: Lead the day-to-day operations, ensuring smooth service delivery and consistently high standards in line with Hilton’s brand standards, policies and procedures.
• Team Leadership & Development: Lead, coach and motivate the Bar team, providing ongoing training, performance feedback and development opportunities while creating a positive and engaging team environment.
• Guest Experience: Create memorable guest experiences through exceptional service, build rapport with regular and new guests, and effectively manage feedback or concerns to continuously improve the guest experience.
• Commercial Performance: Drive the revenue and profitability of 18 Knots through upselling, promotions, incentive programs and other revenue-generating initiatives, working closely with the Operations, Sales and Marketing teams.
• Inventory & Cost Control: Manage beverage inventory, stock takes and ordering while monitoring beverage and payroll costs to ensure effective cost control and achievement of budget targets.
• Rostering & Workforce Management: Prepare and manage team rosters in line with operational requirements and the Hospitality Industry General Award (HIGA), while effectively managing leave and labour requirements.
• Marketing & Promotions: Support the implementation of the F&B marketing plan and work with internal teams and suppliers to develop promotions and initiatives that increase venue engagement and revenue.
• Quality, Safety & Compliance: Maintain high standards of presentation, cleanliness and operational compliance across front and back-of-house areas, including HACCP, WH&S, food safety and responsible service requirements.
• Cross-Department Collaboration: Work closely with the Operations Manager and other hotel departments to ensure seamless operations, effective communication and an exceptional overall guest experience.
• Hands‑on Leadership: Lead from the front and actively support the team during key service periods, ensuring service standards are maintained even during the venue’s busiest times.

In Addition, This Role Requires The Following Minimum Qualifications

• Valid Australian working rights with a minimum of 12 months remaining, with the flexibility to work evenings, weekends and public holidays as required by the operation.
• Previous experience in a Bar Manager, Venue Manager, Assistant Bar Manager or similar leadership role within a high-volume bar, hotel or hospitality environment.
• Strong leadership skills with experience coaching, developing and motivating a team.
• Sound commercial understanding, including beverage cost control, inventory management, labour management and driving revenue.
• Strong knowledge of bar operations, beverage products and service standards, with a passion for creating memorable guest experiences.
• Excellent communication, organisation and problem-solving skills, with the ability to lead confidently in a fast-paced environment.
• Current Responsible Service of Alcohol (RSA) certification, or the ability to obtain one in accordance with Western Australian requirements.
