Job summary

Swillhouse is seeking a Sommelier for Barons Bar & Grill on Sydney Harbour. You will lead wine service, guide guests through the wine list, and support service standards to enhance the guest experience.

Reporting to restaurant leadership, you will collaborate across the floor team, assist with cellar management, and contribute to a wine-focused culture with ongoing training and product knowledge growth.

Qualifications

• Experience as a Sommelier in a quality restaurant environment.
• Strong knowledge of classic and emerging wine regions, producers and styles.
• Confident and personable communication with guests and team.
• Desire to continuously learn and develop wine knowledge.
• Attention to detail and pride in service standards.
• Appreciation for classic hospitality and restaurant culture.

Responsibilities

• Deliver wine service with confidence and warmth throughout service.
• Guide guests through the wine list and support food and wine pairings.
• Assist with daily cellar organisation, stock rotation and wine presentation standards.
• Lead team wine training and expand product knowledge across staff.
• Collaborate with managers, chefs and floor team for seamless guest experience.
• Maintain understanding of menu, seasonal changes and venue service style.
