Job summary

Shell House in Sydney seeks a Head Sommelier to lead the wine program across four venues, including our 2-hatted restaurant, Menzies Bar & Bistro, Sky Bar and Clocktower Bar.

You will mentor a sommelier team, build supplier relationships, tailor storytelling and tasting notes for guests, and align wine with seasonal menus. This senior, hands-on role offers ownership of a program at scale with real scope to grow the cellar and guest experience at The Point's flagship venue.

Qualifications

• Minimum 5 years in hospitality, including 2+ years in senior wine leadership roles.

Responsibilities

• Lead and evolve the wine program across four Shell House venues.
• Mentor and develop the sommelier team and wine staff.
• Cultivate supplier relationships and exclusive allocations.
• Collaborate with culinary team to align wine with menus and events.
• Monitor beverage KPIs, stock, margins and pricing strategy.
