Job summary

Elysium Manly is seeking an experienced Senior Chef with proficient knife skills to join our luxury ocean-front hotel at the Manly Pacific. This full-time role supports the Executive Chef with menu development, food standards, and efficient kitchen operations.

You will work in a fast-paced, detail‑driven environment, ensure HACCP compliance, manage stock and presentation, and mentor junior staff while delivering exceptional dining experiences for our guests.

Qualifications

• Cert IV in Commercial Cookery required.
• Diploma of Hospitality Management preferred.
• Minimum of 2 years' work experience as a Chef.
• Ability to work in a fast-paced environment with multifaceted kitchen operations.
• Maintain a positive and professional approach with colleagues and guests.
• Excellent communication and organisational skills.
• Hands-on, versatile and hardworking with practical outcomes.

Responsibilities

• Supervision of kitchen in the absence of the Executive Chef. Delegate duties and responsibilities to kitchen employees to ensure service demands are met.
• Lead team members by setting a positive example.
• Assist Executive Chef with menu preparation and ensuring adequate supplies are available for expected service.
• Liaise with Restaurant team regarding availability of menu items and changes.
• Maintain excellent presentation standards and cost control for all outlets.
• Ensure stock rotation and minimum wastage with stock control procedures.
• Coordinate apprentices in food preparation and production as required.
• Ensure highest hygiene standards in line with Health & Safety and HACCP guidelines.
• Foster a positive work environment focused on learning and development.
