You will manage pass duties, monitor food and labour costs, and uphold food safety practices while training junior brigade members. Weekend and public holiday shifts are required in this role.

Qualifications

• Certified in commercial cookery is required.
• Strong HACCP knowledge and health and safety compliance is essential.
• Experience as Chef de Partie in a professional kitchen.
• Preferred: valid food safety/supervision certificate.
• Excellent organisation and cost-control abilities.

Responsibilities

• Manage your kitchen section efficiently, ensuring a smooth service flow while providing assistance to other sections as needed.
• Take charge at the pass when required and monitor food and labour costs, staying within budget constraints.
• Maintain a high standard of well-presented dishes aligned with property guidelines and service timelines.
• Provide guidance and training to junior kitchen staff, helping them grow in their roles.
• Keep the kitchen clean, safe, and organised, with emphasis on food safety standards.
