Job summary

Sushi Hub is seeking an experienced Retail Manager for our Penrith store. This full-time role requires hands-on leadership, strong customer service focus and solid operational management skills to drive daily store performance.

You’ll oversee staff across FOH and kitchen, manage inventory and budgeting, ensure food safety and brand standards, and deliver top-tier customer experiences in a fast-paced environment.

Qualifications

• Diploma-level qualification or higher.
• At least one year of relevant experience in a similar retail management role within fast-food/food retail/hospitality.
• Sound knowledge of Japanese cuisine, sushi products, food handling and safety standards.
• Strong leadership, communication and staff management skills.
• Stock and cost control knowledge.
• Ability to work across a rotating roster.

Responsibilities

• Overseeing daily store operations and ensuring cleanliness, presentation and compliance with brand and food safety standards.
• Recruiting, training, rostering, supervising and managing kitchen and FOH staff across extended hours.
• Monitor staff performance, provide feedback and identify training needs.
• Control inventory, place stock orders and manage wastage to protect product quality and costs.
• Lead the team to deliver high-quality customer service and promptly resolve inquiries and complaints.
• Ensure compliance with WHS, food safety and regulatory requirements with store inspections.
• Prepare and manage the store's operational budget and cost-control measures.
• Oversee cash handling and reconcile daily sales.

About Us

Sushi Hub Town Hall is part of the well-established Sushi Hub network, which operates stores across Australia. We are committed to providing our customers with fresh, high-quality sushi and Japanese-style food, together with efficient and friendly customer service.

We are currently seeking an experienced and motivated Retail Manager to oversee the day-to-day operations of our busy Penrith store. This is a full-time, ongoing position suited to a hands-on retail professional with strong leadership, customer service and operational management skills.

Key Responsibilities

The successful candidate will be responsible for:

• Overseeing the daily operations of the store and ensuring that it is clean, well-presented and compliant with Sushi Hub brand requirements and food safety standards;
• Recruiting, training, rostering, supervising and managing kitchen and front-of-house employees across the store’s extended trading hours;
• Monitoring staff performance, providing feedback and identifying training and development needs;
• Monitoring inventory levels, placing stock orders and managing wastage to maintain product quality and freshness while controlling operational costs;
• Leading the team to deliver consistent, high-quality customer service and resolving customer enquiries and complaints promptly and professionally;
• Ensuring compliance with food safety, hygiene, work health and safety and other relevant regulatory requirements, including undertaking regular store inspections;
• Preparing and managing the store’s operational budget, monitoring expenditure and implementing appropriate cost-control measures;
• Overseeing cash-handling procedures and reconciling daily sales transactions;
• Implementing local pricing, promotional and merchandising initiatives to increase sales and profitability;
• Analysing sales, staffing, inventory and wastage data;
• Preparing regular reports on store performance and providing operational recommendations to the Director; and
• Identifying and implementing opportunities to improve customer satisfaction, sales performance and operational efficiency.

Position Requirements

To be considered for this position, applicants must have:

• Completion of a Diploma-level qualification or higher;
• At least one year of relevant experience in a similar retail management or store management role within the fast-food, food retail or hospitality industry;
• Sound knowledge of Japanese cuisine, sushi products, food handling and food safety standards；
• Strong leadership, communication and staff management skills;
• Sound organisational and operational management skills, including stock and cost control; and
• A reliable and motivated approach, with the ability to work effectively in a fast-paced environment and across a rotating roster when required.

What We Offer

• A competitive annual salary of $80,000 plus superannuation;
• A full-time, ongoing position of 38 hours per week;
