You'll oversee budgeting, inventory, and supplier relationships while collaborating with the kitchen to ensure exceptional Italian hospitality and cuisine.

Qualifications

• 3–5 years' experience in restaurant management, fine dining or upscale casual dining.
• Proven budgeting, cost control and profitability track record.
• Strong leadership to recruit, train and mentor diverse teams.
• Excellent customer service orientation with ability to create memorable dining experiences.
• In-depth knowledge of F&B operations, menu knowledge and wine/beverage pairings.
• Experience with POS systems, reservation software and booking platforms.
• Excellent communication and interpersonal skills.
• Able to work evenings, weekends and public holidays.
• Current food handling certificate and commitment to safety standards.
• Qualifications in hospitality management or equivalent industry experience.

Gambaro Hospitality Group is seeking an experienced Restaurant Manager for Persone Italian Restaurant to lead our dynamic team in Brisbane. This is a full-time position based at our Persone Italian Restaurant in Brisbane QLD 4000. As Restaurant Manager, you will be responsible for overseeing all aspects of daily operations, ensuring exceptional guest experiences, and maintaining the highest standards of service that define Persone Italian Restaurant. This role is a hand on role that is pivotal to our success, requiring a strategic leader who can drive profitability, team performance, and customer satisfaction whilst upholding our commitment to culinary excellence and Italian hospitality.

Key responsibilities

• Managing all front-of-house and back-of-house operations to ensure smooth daily service and optimal guest experiences
• Leading, training, supervising and developing the restaurant team to maintain high standards of service, professionalism and product knowledge
• Overseeing financial performance including budgeting, cost control, pricing strategies and revenue optimisation
• Ensuring compliance with health, safety and food hygiene regulations, maintaining all necessary certifications and documentation
• Creating and implementing marketing initiatives and promotions to attract and retain customers
• Managing reservations, table management and peak-time operations to maximise seating efficiency and guest satisfaction
• Addressing customer concerns and complaints professionally to maintain reputation and loyalty
• Liaising with kitchen staff and executive chefs to ensure consistent quality of food presentation and service standards
• Maintaining inventory management, supplier relationships and stock control procedures
• Preparing regular performance reports and providing management with insights on operational metrics and guest feedback

What we're looking for

• Minimum 3-5 years' experience in restaurant management within a fine dining or upscale casual dining environment
• Proven track record in managing budgets, controlling costs and driving profitability
• Strong leadership skills with the ability to recruit, train, motivate and mentor a diverse team
• Excellent customer service orientation with the ability to create memorable dining experiences
• In-depth knowledge of food and beverage operations, menu knowledge and wine/beverage pairings preferred
• Sound understanding of hospitality management systems (POS systems, reservation software and booking platforms)
• Strong communication and interpersonal skills with the ability to work effectively with staff at all levels
• Flexibility to work evenings, weekends and public holidays as required by the hospitality industry
• Current food handling certificate and commitment to maintaining health and safety standards
• Excellent organisational skills with the ability to multitask in a fast-paced environment
• Relevant qualifications in hospitality management or equivalent industry experience
