Mondrian Gold Coast is seeking an experienced evening leadership professional to drive guest experiences in a luxury setting. This hands-on role requires confident floor leadership, a sharp eye for service quality and the ability to manage a large team during the dinner and late-night service.

Join a iconic coastal destination and lead a passionate team, developing leaders, upholding standards, and delivering polished hospitality while supporting the Restaurant Manager.

Qualifications

• Proven experience in a senior floor leadership role within a high-volume, quality-driven restaurant or bar.
• Strong evening and late-night hospitality experience and leadership during dinner and drinks service.
• Excellent organisational skills and ability to manage competing priorities under pressure.
• Strong leadership and staff development skills, with a passion for coaching.
• Availability to work evenings, weekends and public holidays; RSA & RMLV current or willing to obtain.

• Lead the evening service from the front — setting the tone, managing the pace, and ensuring every guest leaves wanting to come back

• Support and deputise for the Restaurant Manager across evening shifts, taking full ownership of floor operations
• Lead and develop a diverse team, fostering a culture that prioritises guest satisfaction, a proactive mindset and genuine hospitality
• Drive departmental performance through effective revenue strategies, upselling and meticulous financial controls
• Build a positive, engaging and results-oriented environment that promotes learning, growth and mutual respect
• Coach, mentor and develop future leaders within the team

THE ROLE

This is a hands-on evening leadership role suited to someone who thrives under pressure, commands the floor with confidence, and knows how to bring out the best in a large team during the most dynamic part of the day.

The Requirements

• Proven experience in a senior floor leadership role within a high-volume, quality-driven restaurant or bar environment
• Strong evening and late-night hospitality experience — you understand the rhythm of a dinner and drinks service and how to lead through it
• Excellent organisational skills and the ability to manage competing priorities under pressure
• Strong leadership and team management abilities, with a genuine passion for developing and motivating staff
• Availability to work evening shifts, weekends and public holidays — this role is built around the evening operation
• Current Queensland RSA and RMLV (or willingness to obtain)
