Job summary

Lawless Hospitality Group in Mullumbimby, NSW, seeks an experienced pub operator to lead two established pubs and a motel. This senior, hands-on role requires leading venue managers, delivering strong commercial results, and maintaining a positive work culture.

You will oversee food, beverage, gaming and accommodation and drive promotions and events to grow the business, with current NSW RSA/RCG; licensee qualifications are valued.

Lawless Hospitality Group is looking for an experienced pub operator to lead two established pubs and a motel in Mullumbimby - all located within minutes of each other, just 15 minutes from Byron Bay. The venues form part of a bigger hospitality group, giving you the freedom to run your operations while being supported by a broader team.

This is a hands-on senior operations role for someone who knows pubs, understands the numbers and knows how to lead venue managers and their teams effectively.

The Role

• Lead and develop teams across multiple sites
• Drive revenue, profitability and overall venue performance
• Oversee food, beverage, gaming and accommodation operations
• Manage labour, COGS, compliance and operating standards
• Drive promotions, events and opportunities for growth

About You

You’re an experienced pub operator with a strong understanding of what drives a successful venue - from people and culture to operations and commercial performance.

You’re confident leading managers, setting clear expectations and holding teams accountable, while still being willing to step in when the operation needs you and maintain a positive work environment.

You’ll bring solid experience across food, beverage and gaming, along with current NSW RSA and RCG. Licensee qualifications are highly regarded.
