Job summary

Rydges Resort Hunter Valley Gather is seeking an experienced Sous Chef to assist the Executive Chef and lead daily kitchen operations during dinner service. You'll oversee food preparation, staff supervision, and quality across Gather's kitchen and banquet events.

The role requires 2–3 years in premium hotel/restaurant environments, strong leadership, and a passion for high culinary standards. You’ll work in a dynamic kitchen culture with opportunities for growth within EVT’s network.

Qualifications

• 2–3 years’ experience as a Sous Chef or strong Junior Sous in premium hotels/restaurants.
• Solid understanding of food cost management, stock control and kitchen financial targets.
• Current Food Safety certificate and WHS knowledge in a commercial kitchen.

Responsibilities

• Lead daily kitchen operations across Gather, ensuring high-quality output.
• Supervise food prep, mise en place, and ensure readiness before service.
• Monitor rosters and delegate duties to chefs while stepping in when needed.
• Train and develop kitchen staff, promoting teamwork and performance.
• Control food costs through stock rotation, ordering, and waste reduction.
• Ensure daily deliveries meet standard recipes and drive menu innovation.
• Collaborate with F&B teams for restaurant and banquet services.
• Maintain a clean, safe, hygienic kitchen adhering to WHS standards.
