Rydges Resort Hunter Valley, part of EVT, seeks an experienced Sous Chef to lead daily kitchen operations, ensuring high‑quality food across hotel outlets and banquet functions. You will supervise, train, and develop kitchen staff while maintaining top culinary standards and strict food safety practices.

Qualifications

• 2-3 years' experience as a Sous Chef or strong Junior Sous in premium hotels/restaurants.
• Current Food Safety certificate and WHS knowledge required.
• Proven experience leading, training and developing kitchen teams.

Responsibilities

• Lead daily kitchen operations across hotel outlets and approve all plated items.
• Supervise preparation, rotation and mise en place; ensure readiness before service.
• Manage rosters, delegate duties, and support staff to ensure smooth service.
• Control food costs through stock rotation, ordering, and waste minimization.
• Collaborate with F&B leaders and front‑of‑house teams to ensure seamless operations.
• Hire, train and develop kitchen staff; foster a high‑performing culture.
• Maintain a clean, safe kitchen environment adhering to WHS and food safety standards.
