Job summary

Homebush Bay Foods in Sydney seeks an experienced baker or pastry cook for our Homebush factory. The role covers bun, cake, biscuit and pastry production, with decoration duties across batches. Monday to Friday, 10am–6pm, in a fast-paced facility.

You will ensure ingredient quality, track batch codes, and maintain strict safety and hygiene standards while meeting production schedules. The morning shift starts the daily workflow for the decoration team.

Responsibilities

  • Prepares and bakes buns, cakes, biscuits and pastry goods.
  • Prepares and bakes bread loaves and rolls.
  • Checks equipment cleanliness and OH&S compliance before production.
  • Checks quality of raw materials and weighs ingredients.
  • Kneads, matures, cuts, moulds and shapes dough and pastry goods.
  • Prepares pastry fillings.
  • Monitors oven temperatures and baking times.
  • Coordinates forming, loading, baking, unloading, de-panning and cooling.
  • Glazes buns and pastries, and decorates cakes with icing.
  • Operates dough rolling and moulding machines and biscuit cutters.
  • Ports out, cleans and greases baking trays and equipment.
  • Manages recipe prep for Cake Decorators, GF ingredients prep, batch codes, WIP, and trace sheets.
  • Works independently early in the morning and aligns with decoration supervisor.

Job description

We require an experienced baker or pastry cook to work on our factory in Homebush.

Monday to Friday 10am to 6pm.

The successful applicant will need to have experience:

Prepares and bakes buns, cakes, biscuits and pastry goods.

Prepares and bakes bread loaves and rolls.

checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations

checking the quality of raw materials and weighing ingredients

kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods

preparing pastry fillings

monitoring oven temperatures and product appearance to determine baking times

coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products

glazing buns and pastries, and decorating cakes with cream and icing

operating machines which roll and mould dough and cut biscuits

emptying, cleaning and greasing baking trays, tins and other cooking equipment

  • Managing the preparation of all recipes that are required for the Cake Decorators during the production day. Work instructions must be adhered to following correct mixing time and maximum temperatures. This is essential in order to prevent quality issues arising from icing blooming.
  • The production day will begin with preparation of any gluten free (GF) ingredients, this includes GF ganache, icings, glazes, shavings etc
  • Recording all the correct batch codes onto the recipes and trace sheets, this is critical to product traceability
  • Managing all work in progress (WIP) which is stored for use on a subsequent production day ensuring all WIP is correctly batched, wrapped, stored and discarded when past its safe use by.
  • As a semi-autonomous role where the employee shall work independently early in the morning. The employee will be responsible to follow a schedule of work as directed by the decoration supervisor. This is to ensure that when the rest of the team begin their shift, the ingredients prepared in the morning match the workflow planned for the day
  • As the first employee to start within the decoration team, it will be their responsibility to prepare the workstation for the first scheduled jobs. This will include any equipment, utensils and packaging materials required. The expectation will be that when the other team members arrive, work can begin at the station immediately
