G’day Group’s Discovery Resorts – Kings Canyon is seeking an experienced Sous Chef to join our kitchen team. You will support the Head Chef in day-to-day operations, mentor staff and uphold high culinary standards across à la carte, buffet and special dining experiences in a unique Red Centre location.

You bring proven Sous Chef experience, trade qualifications in commercial cookery, strong leadership, and a commitment to food safety.

Qualifications

• Proven experience as a Sous Chef or strong senior chef leadership.
• Trade qualifications in commercial cookery.
• Solid menu planning and cost control knowledge.
• A passion for food and guest experience.
• Strong leadership and team development skills.
• Ability to perform in a fast-paced environment.
• Commitment to food safety and hygiene standards.
• A current driver’s licence (desirable).

Responsibilities

• Support the Head Chef with day-to-day kitchen operations, rostering and ordering
• Lead, train and mentor kitchen staff
• Prepare and present high-quality dishes with consistency and attention to detail
• Maintain HACCP and food safety compliance
• Manage stock control, waste and cost efficiency
• Work closely with front-of-house teams to ensure smooth service
