Job summary

G’day Group is seeking an experienced Sous Chef to join the Discovery Resorts – Kings Canyon kitchen team. You will support the Head Chef in leading daily operations, mentor staff and uphold high culinary standards across a la carte, buffet and special dining experiences in a unique outback setting.

This role offers a pathway to grow leadership skills while living in the Red Centre, with a focus on food safety, team development, and guest satisfaction in a remote resort environment.

Qualifications

• Proven experience as a Sous Chef or strong senior chef leadership.
• Trade qualifications in commercial cookery.
• Strong menu planning and cost control knowledge.
• Commitment to food safety and hygiene standards.

Responsibilities

• Support the Head Chef with day-to-day kitchen operations, rostering and ordering.
• Lead, train and mentor kitchen staff.
• Prepare and present high-quality dishes with consistency and attention to detail.
• Maintain HACCP and food safety compliance.
• Manage stock control, waste and cost efficiency.
• Work closely with front-of-house teams to ensure smooth service.
