Job summary

Discovery Resorts – Kings Canyon is seeking an experienced Sous Chef to join our iconic kitchen team. You will support the Head Chef in daily operations, mentor staff and uphold exceptional culinary standards in a remote outback setting.

You’ll help deliver à la carte dining, buffet and special dining experiences while ensuring HACCP compliance, cost control and high guest satisfaction in one of Australia’s most iconic locations.

Qualifications

• Proven experience as a Sous Chef or strong senior chef leadership experience.
• Trade qualifications in commercial cookery.
• Solid menu planning and cost control knowledge.
• Strong leadership and ability to mentor kitchen staff.

Responsibilities

• Support the Head Chef with day-to-day kitchen operations, rostering and ordering.
• Lead, train and mentor kitchen staff.
• Prepare and present high-quality dishes with consistency.
• Maintain HACCP and food safety compliance.
• Manage stock control, waste and cost efficiency.
• Collaborate with front-of-house teams to ensure smooth service.
